Our knives are expertly sharpened to a very fine edge. 16° inclusive. Using VG10 Damascus Steel, the high carbon layer allows for an ultra sharp edge while the low carbon outer layers provide strength. This gives them superior cutting capabilities. However they will need regular honing to maintain performance. We recommend a ceramic honing rod or ultra fine diamond steel.
Our Tip: Resharpening your knife to 30° will give your knife excellent cutting performance but will also keep the edge for longer. Which means less sharpening!
